Last weekend I decided to try baking a lemon meringue pie. It’s my all time favourite and ate the best one I’ve ever tasted in South Africa.
I wanted to have a go at baking this genius dessert, as the ingredients are few and relatively inexpensive – lemons, sugar, eggs, butter, flour and a pinch of salt. My version included a couple of cheats, so not entirely homemade. The only shortcuts I took were the ready-to-roll shortcrust pastry and the lemon filling which I bought in a packet! I wouldn’t recommend the shop-bought lemon filling if I’m honest, I prefer to make everything from scratch so I know that everything in it is ‘real’ food. Reading the ingredients list, it mentioned some flavourings and colourings, not so great, but I’ll try to make the whole thing myself with no cheats next week!
The meringue is the reason I’ve never attempted this before, so was excited to share how it went.
